And if tasting the estate's wines, under the expert advice of the cellar master, remains a must, the pleasure of the senses also continues at the renowned table of chef François Martin with his market menu. The plate reflects Provence and its vines, its colors and its aromas. "I mainly use local products as well as the wines of the Estate that are found in particular in sauces, marinades, granitas", explains the chef who concocts in the fall the famous mallard with root vegetables and figs poached in the Estate's red wine.
